The closer we get to meeting baby #2, the more last minute prep I’m doing. Ya know, nothing like last minute nesting…cleaning out closets, making freezer food, organizing all the things, purging our entire garage…just the usual. One item on my list is most definitely freezer meals.
My aunt had packed me a cooler of delicious freezer meals when we had Clyde and I was super grateful for them, especially once I returned back to work. This time around, although there isn’t a corporate office to return to, there is a small toddler that requires A TON of attention and oh yea, that baby who will most likely be attached at the hip…or boob…or both. Oy!
I’ll be sharing all of the freezer meals that I’ve made thus far here on the blog and to kick it off, I’m sharing a breakfast idea: blueberry muffins! I did not intend to kick it off with these guys however, once I made them, I knew I had to share them ASAP. Also, someone reached out to me on instagram and mentioned that making breakfast meals was the way to go and I couldn’t agree more. Bonus: definitely toddler approved. Of course, you don’t have to freeze these. In fact, I’m sure they’re at their best freshly baked however, these are a great option to also freeze!
To freeze or not to freeze…totally up to you! Of course, you don’t have to freeze these. In fact, I’m sure they’re at their best freshly baked (duh!) however, these are a great option to freeze and enjoy at a later date. Just defrost, grab & go. Easy!
Serving Size: 9 muffins // Prep Time: 10 min // Bake Time 20 min
- 5 tbs unsalted butter, melted
- 1/2 cup sugar
- Zest from 1/2 lemon
- 1/2 cup of milk
- 1 egg
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cup flour
- 1 cup fresh blueberries
Cane sugar for topping
- Preheat oven to 400 degrees & grease muffin tin with butter.
- Melt butter and whisk in sugar, lemon, milk & egg until smooth.
- Add baking soda, baking powder, salt & whisk again until smooth.
- Fold in flour & blueberries
- Divide into muffin wells and sprinkle each muffin with cane sugar.
- Bake for 20minutes. Enjoy!
