I usually make this for myself as a single serving for an afternoon snack (or even sometimes just for lunch) but it would definitely make an excellent salad or side at any summer BBQ or get-together. I love how light & refreshing it is yet the red onion brings a bold flavor, it really is the perfect balance.

Ingredients & Directions for Salad:
- 1 seedless watermelon, cubed. (roughly 10 cups)
- 1/2 cup fresh mint, chopped.
- 2 cups crumbled feta cheese.
- 1 cup blueberries.
- 1/4 cup red onion, chopped.
- 2 tbs olive oil
- 1 tbs balsamic vinegar
- Salt & Pepper to taste
Combine all ingredients in a large bowl, gently toss & serve. Enjoy!
